Christmas Cool Down: Recipes to Rescue Leftover Food
Merry Christmas, you wonderful bunch! I hope you all have a safe, socially distanced (!) Christmas, filled with much too much food, drinks and afternoon naps. We will soon find ourselves in the odd time of year, between Christmas and New Year, where time doesn’t have any meaning. Come to think of it; it’s not unlike most of the year we have spent in lockdown!
Anyway. It is officially the time to be a bum, rest, recuperate, and generally veg out. Getting dressed is optional, Christmas pudding is fully allowed to be consumed for breakfast – brandy butter included – and hairbrushes are non-essential items.

Leftover Meat Recipes
If you’re anything like me, no many how many people I cater for over the Crimbo period, I always end up with enough food left over to feed a small, but hungry, army. And as I hate waste, and am constantly hungry, I’ve decided to share some roast meat recipes to keep you busy!
Leftover Turkey Casserole
Perfect to chuck in a pot with minimal fuss and prep. Uses up most, if not all, of your leftover roast veggies, potatoes and turkey. Taking around 20 minutes to cook, you can have yourself a lovely substantial meal, without having to fork out on all the ingredients!
Monday Beef Pie
I have tried and tested this recipe and I have to say it was a firm win in my house! Using leftover beef, potatoes for the topping, and pretty much anything you want to put in besides! Beans, chopped tomatoes, veg… You name it, you can chuck it in!
Leftover Lamb Curry
If casseroles and pies aren’t your thing, then a nice curry might be right up your street! Make it as mild or as hot as you like, and if you don’t want to waste your lamb – because, lets face it, it’s not cheap! – then you can always make the curry and freeze it for a later date!
Ham Quiche
If you want to start your January health kick a few days early, why not make a quiche? Simple to make, and you can chuck in some extra veggies to fill it out. Also, a crustless quiche is even lower in calories, meaning you can be even healthier without really trying!
Vegetable Fritters
Had enough of meat, or just don’t eat it? You can still get involved! Vegetable fritters are great for either eating on their own, or pairing with something as a side dish. These are also able to freeze, so don’t panic if you have lots of leftover veg – just make them up, then pop in a freezer bag for later!
Soup
Soups are so easy to make, and you can literally use any ingredients to make them. Whether you have meat or veg, chuck into a pot or soup maker, add some stock, herbs and spices, and cook. A quick, substantial meal with no waste! A quick search on google will give you tips and ideas for whatever leftover foods you have.
