Healthy, Low Calorie January Meals to Batch Cook
It may be 2021, but its still January. We still want to save money, minimise effort, and ideally not eat our body weight in chocolate! With this in mind, here are seven exciting January recipes to batch cook in advance, saving you money and effort! It’s a win win!
Italian Vegetable Soup
This hearty yet wholesome soup is great as it takes a meagre 15 minutes to prep, serves 8 (although you can easily double this up for more portions) and its freezable. I love freezable foods as it means I can spend half a day cooking weeks’ worth of meals, and then have a healthy dinner ready throughout the week in no time at all. This recipe also vegetarian, and only a mere 215 calories per portion.
Healthy Fish Pie
This is a firm favourite, and although it only has four portions, its great for a family meal, and of course you can make more than one! Taking only 25 minutes to prepare and freezer friendly, this is a really fulfilling meal to have midweek. At only 364 calories per serving, serve with some veg to keep it healthy yet satisfying.
Sweet Potato and Kale Chili
A great one to spice things up midweek. This one takes just 5 minutes to prepare, and is bursting with flavour. At 219 calories per portion, pair it with some rice for a really healthy yet substantial. If you’re not a huge fan of kale, this can be substituted with most greens. And it’s another freezer friendly hit!
Chicken and Veggie Stir Fry
Stir fry is one of those meals that always goes down well, as they are so flexible! You can cater for even the fussiest of veg eaters, and with so many sauce options, you really can make it for any taste. This one is freezer friendly (of course!), and not only are you making the stir fry, but also the sauce that goes with it; meaning you have total control over what is in your meal! And the best bit – 244 calories per serving!
Pork Pibil
Another different but freezable and low calorie meal with only 279 calories per serving. Perfect for cooking up in the slow cooker, this Mexican dish serves 8, and is perfect paired with rice or tortillas.
Aubergine Parmigiana
A lovely classic Italian dish to keep your menu varied, and very low in calories -perfect for healthy eating this month! This recipe caters for 8, meaning it is perfect for freezing for some great tasting, low effort midweek meals. It is also vegetarian, so perfect for all!
Slow Cooker Chicken and Dumplings
This meal is slightly higher in calories, at 574 calories per serving, but it is complete comfort food that is still fairly healthy. It is made in the slow cooker, and freezable, and perfect on those cold winter nights to warm you up from the inside out!
